Sweet potato porridge : Healthy clear porridge

This is going to be the simplest recipe that you will ever find; and it's good for your health too.

It is called sweet potato broth or sweet potato porridge. A very humble soupy dish commonly eaten by the Chinese. It takes about 30 minutes to cook. That's all.

What do you need? Only sweet potato, rice and a few slices of ginger.

Sweet potato porridge is a very soothing soupy meal, especially when you consume it hot. I bet after you have had a bowl of this sweet potato porridge, you would feel naturally rejuvenated.

Sweet potato porridge : Full of nutrients

If you are still hesitant to try this simple recipe, let me tell you that sweet potatoes are one of the super foods which conatins tons of healthy nutrients. Sweet potatoes have a very high level of antioxidant nutrients, anti-inflammatory nutrients, and blood sugar-regulating nutrients. They have large amount of vitamins A, B6 and C, manganese, copper, potassium, iron and dietary fiber, together with complex carbohydrates. However, sweet potatoes are low in calories and fat-free.

Sweet potatoes can prevent cardiovascular problems and even cancer. Their special nutrients can strengthen our immune system, and help maintain our bone structure and skin condition.

So now I think you have more good reasons to try my simple and healthy sweet potato porridge recipe.

Sweet potato porridge : The recipe

Ingredients for two persons.

1 small size sweet potato (about 125gm, or roughly 2 cups)

4 slices of ginger

1 cup rice

5 cups water

Method:

1. Peel the sweet potato, and cut into small pieces

2. Put rice, sweet potato, and ginger in an open pot

3. Add the water

4. Bring to boil under high heat

5. Then simmer under low or medium heat,

add water as and when needed,

stir occasionally to prevent the rice and potato from sticking on the pot

6. Ready to serve when the sweet potato and the rice are soft, about 30 minutes

7. Preferably serve hot

Personal preference:

1.For your personal preference, you can control the water content by adding or reducing the amount of water.

2.You may add a little soy sauce for taste

3. You may also have accompanying side dishes like peanuts, salted egg, preserved veges, or anything of your choice.
