A simple soup recipe

Black bean soup has medicinal values. The Chinese prepare black bean soup with pork ribs or pork leg. Black beans have high fiber, protein and antioxidant and anti-inflammatory properties and rich in vitamin B6. Black bean soup helps in digestion and lowers blood cholesterol level. Taking black bean soup may also reduce the risk of cancer. Whatever the reasons, black bean soup with pork ribs or pork leg is very delicious.

This black bean soup recipe is very simple. The soup is usually taken as one of the side dishes with rice. This is the Chinese manner of having the main meals. However, you may always take the soup by itself without any accompaniment.

Just follow the simple ingredients and follow the instructions below. This recipe is good for four persons.


Ingredients (for four bowls)

  • 100 gm black beans
  • 300 gm (12 small pieces) pork ribs, chop into 1-inch pieces
  • a pinch of salt, or to taste
  • 1 teaspoon (or to taste) pepper corns, slightly crushed
  • 1 teaspoon (or to taste) soya sauce, (optional)
  • 1.5 liters water, will end up with about 1 liter

Instructions

  1. Wash and soak the black beans in water for at least 2 hours. Preferably overnight.
  2. Boil the water in a pot.
  3. When the water is boiling, put in the pork ribs together with the black beans and pepper corns.
  4. Continue to simmer for at least two hours, or until the pork ribs are tender and the black beans are soft to your liking.
  5. Add in the pinch of salt and the teaspoon of soya sauce. Ready to serve; and I prefer to take the soup hot.
